FOUNDING

BrewBilt Brewing was founded in 2021 with a deliberate focus on balanced and approachable beers made with locally sourced craft malt. This commitment to Sacramento Valley-grown barley, wheat, and oats supports local craft-minded producers like Admiral Maltings, reduces the carbon footprint of our production, and makes damn tasty beer that maintains freshness better than beer made from commodity malts.

In December 2023, we opened our taproom and restaurant BrewBilt BrewHaus in downtown Nevada City. BrewHaus shares the brewery's devotion to European craft quality and local ingredients, served up by friendly faces in a relaxed atmosphere. We also have the sunniest patio in town!

We strive to be a vital part of our community that supports us, so we try to give back whenever possible. Whether we’re sponsoring our local community radio station, donating beer for a fundraiser, or just throwing a party that brings people together for some fun times, BrewBilt aims to be a pillar of our amazing Nevada County community.

BrewBilt firmly believes that providing the highest level of service can make all the difference. We view our customers as partners who deserve personalized service and consideration. Our sales team hustles everyday to provide the care and attention required to make sure our accounts are happy. 

BREWING PROCESS

We start with reverse osmosis purified water and then add specific brewing salts to build the perfect mineral profile for each beer. Depending on the recipe, our customized base water allows us to achieve a range of outcomes, whether that is accentuating the soft body of a pilsner or the hoppy impact of an IPA. BrewBilt uses only the best local craft malt, supplied by Admiral Maltings, most of which is grown in the Sacramento Valley. We naturally carbonate all our beers through the use of spunding valves for the best mouthfeel. We also never filter our beers; instead, we patiently cold-condition our lagers in horizontal tanks to achieve perfect clarity while retaining all the flavor. These methods certainly increase production times and ingredient costs compared to those of the standard craft brewer, but in this case, the ends (distinctly satisfying beers) definitely justify the means.
