Ah our beloved Jester’s. We’ve fawned over our distinct WC IPA since our beginnings and we still find it to be as charming as ever. A modern West Coast IPA built with a blend of two pilsner base malts, floor-malted Pale malt from Admiral Maltings complimented by a dash of California-grown chit & malted white wheat.

Since Jester’s inception (nearly 4 years ago now - wow!), we’ve explored the combination of German grown Huell Melon hops paired with El Dorado & Citra hops from the Northwest. Huell Melon’s unique heritage includes the well known classic Cascade paired with a German male, then bred & grown in German soil. The result is distinctly different from a US grown Cascade (think fleshy yellow stone fruit, strawberry, and ripe melon) and further demonstrates the impact of terroir in hop flavor and aroma. We charge the whirlpool with an abundance of Huell Melon to impart the foundation of hop flavor before dry hopping commences.

Next, fermentation starts on the cool-side of ale temperatures with our house Kolsch strain. Once the wort is well attenuated, dry hopping begins with sturdy additions of El Dorado and a smaller percentage of Krush. We love the drippy pineapple and juicy fruit notes El Dorado contributes while Krush amplifies the edges of the hop essence with deep tropical notes and a kiss of mango. For our second round of dry hopping we employ a blend of Citra & Citra Cryo hops to lock in deeper impressions of freshly cut citrus, stone fruit, and a hint of melon.

Our goal has always been to deliver a vibrantly aromatic, crisp, complex IPA that retains a high-level of drinkability paired with a modest ABV content. Our house Kolsch strain finishes plenty dry and accentuates a snappy finish and gets out of the way, allowing the bouquet of hops to remain at the forefront of the sensory experience.
